Bikini from Nelly.com, sunglasses from River Island and my new hat is from H&M

Tomorrow me and Wille are leaving London for a week of sun, ocean and just relaxing! We're off to Bulgaria to get away from the horrible weather in London to try to get some colour instead of being pale the entire summer. I will bring my laptop and camera with me and if the hotel wifi allows me to, I will definitely update you as close to usual as I can. If the wifi decides not to cooperate - I'll see you in a week's time! x

Hi everyone, today I thought I'd update you about my first year at university and also how my first year abroad have been.

I've done a post about this before (HERE) and also made two different Youtube videos about this (HERE and HERE) but those were all made a while back and there are some things that I thought I should update you about and since I've gotten quite a few new followers since then and get the question more frequently to write more about living abroad and especially studying abroad. So why not do an updated version of my previous talks and posts? :)

For those of you who don't know I just finished my first year of university doing BA Marketing at a London based university. Since I'm doing a full bachelor I'm going to be living in London for at least 3 years and then we'll see how I go from there.

I absolutely love studying in London and especially since I'm studying exactly what I want to do in the future makes this the ultimate experience for me. The biggest difference I would say from studying in any other city than London is that London is such a big and diverse city with endless opportunities for any interests and with endless possibilities to pursue your dream career or hobby. There are so many more job opportunities than in a smaller city which I'm from and you quickly learn that if you miss one job opportunity there will be another waiting just around the corner if you're "hungry" enough. ;)

First year of university I would say was quite a challenge for me in the beginning. It was hard for me to adapt to study in a new language. The English that we learn back in Sweden do not really prepare us for all the different accents you come across on a daily basis living in an English speaking country.  It was definitely tough but I continued working hard and what I thought really helped the most was getting an internship or even a job while studying. Doing this you will have to talk on a daily basis with loads of different people from all over the world and since you're doing that and not just sitting in a classroom or the library everyday of the where you don't have to talk you get hands on experience that will definitely make you feel more comfortable speaking freely without thinking too much about what to say.

The level of study I would definitely say was lower then I expected first year of university to be, I've also heard from a lot of people that first year is a lot easier than second year for some reason. I would definitely say that first year feels more like an introduction since it doesn't count towards your final grade on your diploma. But at the same time you have to land good grades if you want to get an internship during summer or anytime during your second year since it's those grades that the employer will use as reference. Thus, I would not expect it to be too easy, I've still struggled with some assignments and some modules but overall; easier than expected.

The biggest downside I would say studying abroad compared to home in Sweden are definitely the expenses. It is ridiculously expensive to live and study abroad (especially London) and sometimes you feel like all your hard work earning money goes to literally nothing. The rent is way overpriced and the tuition fee is painful to pay. Even if you get student finance which covers A LOT you still have to pay it all back when you finish. That I would say is definitely a bummer and something to really consider if you are thinking of studying abroad.

On the other hand, moving to another country away from home is incredibly healthy for anyone I would say. If you're not grown up before moving you will definitely need to grow up fast once you've moved. Your parents are not going to be there making decisions for you since they have no clue on how the country that you're living in works. The system is entirely different and it's really up to you to get all the information you need and fix everything yourself. Of course you can ask for help but it's not like your mum can travel to another country just to help you set up the internet in your apartment. So, for anyone feeling that you're stuck with your family and doesn't feel very grown up - move abroad!

To summarize this incredibly long post I would just want to say to all of you who are interested in moving abroad or even just moving away from home: use Google! I'm serious, google is definitely your best friend in any situation. It doesn't matter if it's how to change a light bulb or connect your new internet router, Google is your best friend. And also, I am your best friend. I might not know everything about everything but I would say that I've gained loads of experience. So if you ever have any questions about my studies, living abroad in London or anything else feel free to comment on my posts or even send me an email to: josefinmolanders@gmail.com and I will definitely try to help out as much as possible.

I really hope that this post will help someone with their thoughts about moving abroad, I'll catch you soon again! x

These little things were all the hype a while back and I've recently fallen back in love with them - banana pancakes. They are super easy to make and also fills you up without any bad ingredients.

To make these amazing pancakes you will need:
2 eggs
2 bananas
A handful of oats (optional but makes them more filling)

Mush your bananas into a bowl while whisking your eggs in another one, mix together and add your oats. Fry in coconut oil or vegetable oil for a healthy and delicious breakfast! x

I love to mix patterns together, it makes an outfit much more interesting and fun than to just go with one pattern matched with either a plain top or bottom. The top I'm wearing is a bit older from Zara and the pants are a newfound love from New Look's petite section (since I'm a mini-person and nothing like this ever fit me) and they are just amazing, super flattering fit and I love the pattern! This outfit I decided to match with my beloved bright orange lipstick that I got from one of my best friends a couple of years back. A bright lipstick is always a good idea if you want to spice up an outfit or just add a pop of colour to your face.

Today we were planning on going down to Hyde Park to join the big Midsummer celebration with the other Swedes but Will realized that he had to be in the studio today until this afternoon and the weather doesn't look too inviting to sit outside to be honest. So we're thinking about doing our own little picnic at home and eat our Midsummer food here instead. We'll see!

I had a haircut the other day and it got A LOT shorter. I haven't had my hair this short since I was 13 I believe. But I really, really like it! It feels a lot more airy and is much easier to style than before. Other than the huge difference in length I did some new highlights to go a blonder for summer. Feels so much nicer now when that's done.

I also have a thing for midi dresses at the moment. I love when they are a little bit longer than knee length, it's much more flattering and easier to wear than the short-short dresses that I'm used to. And also since most maxi dresses does not fit me at all a midi dress is the way to go!

Today has been such a lovely day and I am really enjoying having a break from everything. Now I'm going to grab myself a little snack and begin to do some Swedish meatballs for our Midsummer celebration that's taking place tomorrow. For all my Swedish readers out there: Glad Midsommar! x

So I did a moodboard today with some goodies to inspire me for my upcoming holiday in Bulgaria and (hopefully) warmer weather. Just looking at these pictures gives me a lovely summer feeling!

I had my last day at work today, so now I can finally (officially) enjoy the rest of my summer break without work. Super excited to have some time off before I start my second year in October!

Other then that, I've been to the gym this afternoon with Will after a way too long break (you don't even wanna know) and then just been chilling at home with some fresh strawberries to snack on. I hope that your week is going good so far! x

So, this is basically what I have for lunch/light dinner when I don't have the time or energy to stand in the kitchen for too long. This dish takes about 10-15 minutes to do and is super easy to do. I often vary my ingredients (at the moment quorn is my favourite protein to add) but the concept is all the same so I thought I would share this one with you.

All you need to create this easy yet delicious dish is:

- Quorn (or another protein of your choice)
- Creme fraiche
- Veggies (use whatever is in your fridge)
- Spices (I used italian herbs, salt, peppar, garlic and paprika to add colour)
- Rice (or pasta)

Start of by boiling your rice since this takes a while. Slice up your fillets into smaller pieces and put on a pan with heated oil. Fry the quorn with your spices. Add your veggies and let them become a bit softer. Add your creme fraiche and mix it all together into a smooth, creamy mixture. Add more of your spices if you feel like it tastes bland. Let it heat up throughly and leave it for a minute or two. By now your rice should be ready so put it all into a bowl and enjoy!

Also, if any of you have any vegetarian/vegan recipes to share - shoot!

Some pictures from yesterday's afternoon tea. Me and Will celebrated 2 years together on the 14th and have not had time to properly celebrate until yesterday. And what better way to do it then to drink prosecco and have afternoon tea like the Brits we are? ;)

I've come to realize how fast time has passed. It feels like we met yesterday and the fact that we have been living together for 9 months now still feels unreal. But you know what they say; time passes fast when you're having fun. And I hope that we get many more fun years together!

So, as you have noticed I've been quiet for the last couple of days. I decided to not feel stressed about blogging since it got to the point where I tried to squeeze together blogposts with not the best quality or content. With that said, I took a break to focus on work for my last week, and now I'm finally back! More posts will be coming up more frequently and hopefully you want to continue following me on my journey.

This is mine and Will's pizza from the other day. Absolutely incredible. But, I encountered so much trouble when trying to do it and finding ingredients (fresh yeast is close to impossible to find in London) I came across a really easy pizza base recipe without yeast. Can we take a moment and appreciate this?

So, if you're inpatient like me and don't have the time to wait while your pizza dough rises you definitely want to try this recipe. It's really nothing special but it does the job and the dough comes out more than alright.

All you need for making one pizza is:

2,5 cups of plain flour
2,75 tsp baking powder
1 tsp salt
1 tbsp oil
0,75-1 cup of water

Mix all dry ingredients, then add oil and water until you get a soft ball that's not sticky. Knead for 3-4 minutes. Add toppings of your choice (we had tomato sauce, mozzarella, homemade pesto, peperoni, olives, tomatoes, cheddar cheese and some Italian seasoning for flavor). Bake at 200C for 15-25 minutes.

And then it's all done! Enjoy your lazy pizza! xx

 Hello everyone!
It's such lovely weather in London today and both me and Wille are getting outside soon to just relax in the beautiful weather for a while. I've learnt over the past few months that you really have to appreciate the sun while it's out because you never know when you'll see it again. ;)

This weekend will consist of nothing really unusual other than putting together the last details in our amazing apartment before we can really call it home. But it sure is starting to look like it! I also realized that I completely forgot to bring any shorts from Sweden so at the moment I only have a couple of skirts and longer pants and jeans. So I really need to get my hands on a pair of shorts, asap!!
